Max
Max is an audio utility for Mac OS X. I haven’t tried it, but it appears to be in many respects an alternative to iTunes in that it will rip CD audio, look up track metadata from online databases, and then compress the audio using codecs including MP3, AAC, Apple Lossless, and Ogg Vorbis. If you want to build up an audio collection in one of the formats that iTunes doesn’t support (e.g. Ogg Vorbis) this may be the perfect program for you.
